Sweet and Salsa Chicken
1 – 1 1/2 lbs. of chicken breast cut into bite-size pieces and cooked
1 jar of salsa (any brand)
1 jar of apricot or peach preserves (any brand)
3 cups of cooked rice
Cut chicken breast up and cook in skillet over medium heat until cooked through. Add chili powder to taste. Add preserves to the pan and let them "melt" a little. Add salsa and mix all ingredients together. Serve over cooked rice. Enjoy!
