- 3 tablespoons of butter
- 2 tablespoons of olive oil
- 2 cloves of minced garlic
- 1 small chopped onion
- 2 1/2 cups of milk
- 2 teaspoons of dried oregano
- 3 cubes chicken bouillon
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of cold water
- 2 tablespoons of cornstarch
- 1/2 pound of chicken, cut into chunks and grilled
- 1 16 oz. package of linguine pasta
- 3 tablespoons of chopped fresh parsley
- 1/4 cup of lemon juice
- 1 teaspoon of lemon zest
- 1/2 cup of grated Parmesan cheese
Melt butter in a saucepan and add in the olive oil, sauté garlic and onion until tender. Add the milk, oregano, bouillon, salt and pepper and bring the mixture to a boil. Reduce to medium heat and cook for 5 minutes.
In a medium bowl, whisk the water and cornstarch. Add this and the chicken to the saucepan and cook until thickened (5 minutes).
Boil a large pot of water and cook the linguine according to the package directions.
Reduce the saucepan’s heat to low and add the parsley, lemon juice, and zest. Stir for one minute. Add the pasta and toss to coat. Serve topped with Parmesan cheese, and enjoy!
