Summer Recipe: Rosemary Ranch Chicken Kabobs

Recipes: Rosemary Ranch Chicken KabobsGrill Up These Tasty Skewers This Summer

The weather is heating up, which does not just mean you will have more opportunities to head to the beach. It also means that you will have the chance to fire up your grill and add a whole new flavor to your recipe routine. So you can take advantage of the summer season, we want to give you one of our favorite grill recipes: Rosemary Ranch Chicken Kabobs. To make this tasty meal, you will need:

  • ½ cup of ranch dressing
  • ½ cup of olive oil
  • 3 tablespoons of Worcestershire sauce
  • 1 tablespoons of fresh rosemary, minced
  • 2 teaspoons of salt
  • 1 teaspoon of lemon juice
  • 1 teaspoon of white vinegar
  • 5 chicken breasts, cut into 1 inch cubes
  • Granulated sugar and black pepper, to taste

In a medium mixing bowl, combine the dressing, oil, Worcestershire sauce, rosemary, salt, lemon juice, and sugar and/or pepper if you prefer. Let this mixture stand at room temperature for five minutes. Then, add the cubed chicken to the bowl and toss so that each piece is coated. Cover and leave to marinate in the refrigerator for 30 minutes.

Heat your grill to medium-high. Thread the marinated chicken onto skewers (you can discard the marinade). Oil your grill grate, then grill each skewer until the chicken in no longer pink and the juices run clear. This should take between 8 and 12 minutes.

Enjoy! These skewers are great as a meal on their own, but you can also toss this chicken in with your summer salads to boost their flavor and protein!
